David Bocognano, director of operations Pierre’s Restaurant, located on one of the most beautiful "keys" in Florida speaks of Pierre’s and "French Spice".

"French Spice" is the gourmet event of "French Weeks" in Miami. From October 24 to November 15, the best of French cuisine South Florida is offered to all!

David Bocognano, hello, you’re the director of operations at Pierre’s Restaurant, a place not only elegant, but heavenly. What is the history of the restaurant and what opportunities brought you to join this team?

Pierre’s Restaurant is located on Islamorada. Along with another restaurant, Pierre’s restaurant is part of the Morada Bay complex. The Islamorada “Key” is pretty narrow but is where most people live in the Keys. Morada is a small village that was passionately built 25 years ago, stone by stone. Many come here for the holidays or to escape to Miami for a weekend.

Pierre is the name of the restaurants owners father, who is French. Pierre’s restaurant is a charming place, known for its view, its calming atmosphere, and sunsets ... In addition, everything in this restaurant inspires for travel and escape with colonial style decorations, furniture, and lamps. All these objects are filled with history and come from all over the world. On arriving to the parking lot, right next to the restaurant – it already feels like you are travelling, and one word comes to mind: ‘escape’.

On my part I have always been in the world of catering and hospitality even though I’m originally from New York, not Miami. I’ve only been at the restaurant for 2 years and the owner is a friend. Just like in New York, stress is present because I manage 150 employees but the place is wonderful and beautiful.

The restaurant located on one of the most beautiful keys reminds visitors of the Caribbean, Does your kitchen incorporate flavors of Martinique and Guadeloupe?

On the menu you will find Caribbean flavors, and we definitely do not lack any dishes with mango and fish. Our chef himself is Bahamian.

Pierre’s restaurant has embraced the concept of "French Spice", what are you going specifically introduce to your customers on this occasion?

For "French Spice" we offer a weekly changing French menu. The goal is to really cook French for the occasion. The first week, for example, we offer a menu with a nicoise salad starter, Coq au Vin as a main dish and a dessert crepe with Nutella.

With "French Spice" we want to make sure and please our customers in Miami and lovers of French cuisines elsewhere. Pierre’s Restaurant is a place where you can relax and enjoy. Being French myself, participating in “French Spice” was only natural.
